A Healthy Treat: Sweet Potato Cookies

A tasty & creative healthy alternative to the typical chocolate chip cookie.

This cookie is so soft and chewy, it's almost like a muffin cookie!
A delicious cookie that is melt-in-your mouth delicious, so soft and chewy you won't be able to stop eating them!
Sweet Potato Cookies
Ingredients:
1 medium sweet potato
2 cups almond flour or coconut flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. ground cloves (optional)
1/4 tsp. ground coriander
Sea salt, to taste
2 eggs
3/4 cup coconut sugar
1/4 cup olive oil / avocado oil
1/4 cup unsweetened applesauce (or just do 1 cup coconut sugar above instead, if you don’t have applesauce)
2 tsp. pure vanilla extract
1 cup dark chocolate chips
Directions:
Preheat oven 400 degrees F.
Wash sweet potato, pierce all over with a fork, then roast on a baking sheet for 40 minutes, until tender when pierced with a fork.
Let cool, then peel the skin off, mash with a fork in a bowl, and set aside 1 cup of the sweet potato puree for baking the cookies.
Reduce oven temperature to 350 degrees F.
In a large bowl, combine the flour, baking powder, baking soda, cinnamon, clove, coriander and sea salt.
In a separate bowl, beat together the eggs and coconut sugar until smooth.
Slowly mix in the oil, applesauce, and vanilla.
Mix sweet potato puree into the wet ingredients.
Add sweet potato mixture to the dry flour mixture. Fold together until just mixed. Do not over mix. Gently fold in the chocolate chips.
On a lined baking sheet, drop cookies with a tablespoon onto the prepared baking sheet 2 inches apart (they may look small).
Bake for 9-11 minutes, until a toothpick inserted in the center comes out clean.
Let cool for 10 minutes on the baking sheet before removing.
