Who doesn’t love the classic sugar cookie? From the buttery texture to the subtle sweetness, sugar cookies are a timeless treat. But what if you could enjoy them guilt-free? This healthier version of sugar cookies swaps out traditional ingredients for more nutritious options, so you can indulge without compromising your goals.
Healthy Sugar Cookie Recipe
Ingredients
1 cup unsalted butter, softened at room temperature (or substitute with 1/2 cup coconut oil + 1/2 cup unsweetened applesauce)
3/4 cup coconut sugar (or granulated monk fruit sugar)
1 large egg (or flax egg: 1 tbsp ground flaxseed + 2.5 tbsp water)
1 tsp pure vanilla extract
2 1/2 cups white whole wheat flour (or 2 cups almond flour + 1/2 cup oat flour for gluten-free)
1 Tbsp baking powder
1/4 tsp sea salt
Directions
Preheat Your Oven: Start by preheating the oven to 350°F (175°C) and lining a baking sheet with parchment paper.
Mix the Wet Ingredients: In a large mixing bowl, beat together the butter (or coconut oil/applesauce) and coconut sugar until creamy. Add the egg (or flax egg) and vanilla extract, mixing until fully combined.
Combine the Dry Ingredients: In another bowl, whisk the flour, baking powder, and salt. Slowly incorporate the dry mixture into the wet ingredients, stirring until a soft dough forms.
Chill the Dough: Cover the dough and chill it in the fridge for about 30 minutes. This makes it easier to roll out and cut.
Shape the Cookies: Roll the dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to create your desired shapes.
Bake to Perfection: Arrange the cookies on the prepared baking sheet, leaving a little space between each. Bake for 8-10 minutes, or until the edges are slightly golden.
Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Tips for the Perfect Cookie
Get Creative with Toppings: Drizzle melted dark chocolate, roll on some naturally flavoured sprinkles, add a sprinkle of coconut flakes, or dust with a little cinnamon for extra flavour.
Make Ahead and Freeze: These cookies freeze beautifully. Simply store them in an airtight container, and they’ll keep for up to 3 months.
How Many Cookies Does It Make?
This recipe makes about 24-30 cookies, depending on the size and shape of your cookie cutters. If you roll the dough thicker, expect fewer cookies; if thinner, you’ll get a few extra.
